BBQ Chicken Pizza


This pizza is so easy and delicious! It is a sure crowd pleaser, and you can change up your toppings to experiment with lots of flavors. Even pineapple if you dare! You will look so super fancy making something that looks and tastes this amazing! You could make this for your first get together after COVID19 passes or enjoy it this week with your family. It reheats well so you can eat the leftovers easily.

Make your own dough using my homemade pizza dough recipe!

Special Tips:
  • If working with frozen or cold homemade dough, allow the dough to come to nearly room temperature before rolling.
  • Use a cast iron skillet for amazing results! I put mine in the oven while preheating. Then I take it out and oil it carefully while it's hot. This will help your dough cook more consistently and give you a little crunch on the bottom!
Ingredients:
  • 1 tbsp olive oil
  • Homemade or store bought dough at room temperature
  • 4 tbsp of your favorite BBQ sauce, divided
  • 1 cup Mozzarella cheese, freshly grated
  • 1 tbsp Parmesan cheese, freshly grated
  • 1 cooked chicken breast, shredded
    • This can be done by coating chicken breast in salt and pepper and baking at 350 degrees until the internal temperature reaches 165 degrees. Shred with forks.
  • 1/4 red onion, thinly sliced into strips
  • Salt and pepper to taste
Directions:
  1. Preheat oven to 400 degrees with a 12" cast iron skillet on the middle oven wrack
  2. Once preheated, remove the skillet and set aside
  3. Using your hands or a rolling pin, roll out the dough in a circle large enough to fit in the skillet
    • It's very easy to roll it too big, so aim for a smaller circle
  4. Carefully oil the cast iron skillet with 1 tbsp oil and a folded paper towel. Wipe the skillet once more with a clean folded paper towel to remove excess oil
  5. Add your rolled out pizza dough
    • If you rolled it too big, manipulate the dough around the edges to get a nice crust that keeps up the sides of the skillet
    • If you rolled it too small, gently tug on the edges until it meets the sides of the skillet all the way around
  6. Add 3 tbsp BBQ sauce to the center of the dough and spread out with a spoon to the edges
    • You can leave 1/2 an inch of dough around the edges if you like a lot of crust!
  7. Sprinkle Parmesan cheese evenly on the BBQ
  8. Add 3/4 cup mozzarella evenly of the pizza
  9. Add shredded chicken evenly over pizza
  10. Add red onion  evenly or other veggies if desired
  11. Top with remaining mozzarella
  12. Sprinkle lightly with salt and pepper
  13. Bake for 18-22 minutes. The cheese will be browned the bottom of the pizza should be tan or beige
  14. Remove pizza from oven and skillet onto a cutting board or pizza pan
  15. Drizzle with remaining 1 tbsp BBQ sauce
  16. Cut and enjoy!
Extra Love:
  • Mix it up with veggies or fruit! A great combination would be chicken, pineapple, and banana peppers to create a Hawaiian pizza with a BBQ twist!
  • If you don't have a cast iron skillet, you can bake this pizza on a greased baking sheet, pizza pan, or pizza stone. Your baking times with vary based on which you choose, so just keep watching the bottom of the pizza and the cheese for those colors mentioned in step 13.
  • If you don't have all the ingredients on hand, you really only need three: dough, BBQ sauce, and chicken!

Nanni's Meatballs

  Around Christmas time last year my Nanni passed away. She left behind a beautiful and well lived life which made possible 4 children, 14 grandchildren, 1 great grandchild, and countless friends and extended family. My macaroni and cheese is my most requested, pot-luck-pleasing, party-going recipe so why should it not be the star of my very first post? This recipe has become a staple of my household, adored by my husband and all of our friends and family.
