One Pot Chicken Noodle Soup


This chicken noodle soup is easy, quick, and great for days where the weather just can't make up its mind! Snow, rain, hail, or shine? No matter the weather, soup is always a good choice! It is so simple, and will fill your home with delightful aromas! 

Special Tips:
  • I like to use chicken stock instead of broth because it has more body and flavor, but you can use either to make this soup!
  • Just a little lemon juice will brighten up your broth! You can also use citrus to dampen saltiness if you accidentally added too much salt!

Serves 4

Ingredients:
  • 2 small boneless, skinless chicken breasts
  • 4 cups chicken stock or broth
  • 2 tbsp butter 
  • 1/2 yellow onion, diced
  • 3 celery stalks, chopped
  • 2 carrots, chopped 
    • I used 1/2 a cup of shredded carrots that I had previously bought for a salad!
  • 3 cloves garlic
  • Water: between 1/2 cup to 1 cup
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1.5 tsp dried thyme
  • 1/2 tsp lemon juice
  • 6 oz egg noodles

Directions:
  1. Melt butter in a Dutch oven over medium-high heat
  2. Add onion, celery, garlic, salt, and pepper to the Dutch over
  3. Saute until onions are translucent, 3-5 minutes
  4. Add chicken stock slowly and while stirring to avoid burning
  5. Add the thyme
  6. Place chicken breasts into the stock on top of the vegetables
  7. Bring soup to a boil, cover, and reduce heat to a simmer for 20 minutes
  8. Remove chicken, shred into bite size pieces, and return to soup
  9. Add a little water or more chicken stock if you lost some volume during the simmer
  10. Add egg noodles and stir to combine noodles throughout soup
  11. Cover and simmer for an additional 5-7 minutes depending on the package instructions for the egg noodles
  12. Add the lemon juice to brighten your sauce
  13. Before serving, taste your soup! Add salt and pepper to taste.
  14. Serve immediately and enjoy!

Extra Love:
  • Serve this soup with a crusty bread for extra comfort!
  • You can substitute carrots for peas or leave them out entirely if you don't have them on hand!
  • You can freeze this soup easily by leaving out the noodles from the portion you intend to freeze. You can cook the noodles separately and add them to the portion you want to eat right away!

Nanni's Meatballs

  Around Christmas time last year my Nanni passed away. She left behind a beautiful and well lived life which made possible 4 children, 14 grandchildren, 1 great grandchild, and countless friends and extended family. My macaroni and cheese is my most requested, pot-luck-pleasing, party-going recipe so why should it not be the star of my very first post? This recipe has become a staple of my household, adored by my husband and all of our friends and family.
