Spicy Pineapple Chicken Tacos


This recipe is yum, yum, YUMMY! The chicken roasted with pineapple and poblano peppers will blow your mind with flavor! Then adding the pineapple salsa and homemade crema will give your taste buds a new flavor and warm tingle in every single bite! You can make this in an Instant Pot or slow cook it all day long! I hope you enjoy this delicious taco recipe!

Special Tips:
  • Wear gloves when chopping the poblanos and jalepenos! Burns from spicy peppers are no joke!
  • Have this dinner ready in 30 minutes when you use an Instant Pot or other pressure cooker
  • Leave the chicken breasts whole until you are ready to shred it at the end for a juicier, perfectly cooked result
Serves 6

Ingredients:

For the Chicken:
  • 2 pounds boneless skinless chicken breasts 
  • 1/2 sweet onion, diced 
  • 3-4 cloves garlic, minced or grated 
  • 2 tsp chili powder 
  • 1 tsp paprika 
  • 1 tsp cumin 
  • 1 tsp salt 
  • 2 chipotle chile peppers in adobo, chopped 
    • (you can find this in a can by the Goya beans!)
  • 1/2 cup pineapple juice 
  • 1 cup fresh pineapple chunks 
  • 1 poblano pepper, sliced 
  • corn or flour tortillas
For the Salsa:
  • 1 cup fresh pineapple, finely chopped
  • 3/4 red bell pepper, finely chopped
  • 1/4 sweet onion, finely chopped
  • 4 tbsp fresh cilantro, finely chopped
  • 1 jalepeno, deseeded and chopped
  • dash of salt
  • juice from 1 lime
For the Crema:
  • 4 tbsp sour cream
  • zest from 1 lime
  • juice from 1 lime

Directions:
  1. Add whole chicken breasts to Instant Pot or slow cooker
  2. Add onion, garlic, chili powder, paprika, cumin, salt, chipotle chile peppers, pineapple juice, pineapple chunks, and poblano on top of the chicken
  3. Mix slightly to combine and coat the chicken
  4. Cook on high for 25 minutes in a pressure cooker, cook on low for 6-8 hours in a slow cooker
  5. While the chicken is cooking, make the salsa and crema
    • Salsa:
      1. Combine all ingredients for the salsa
      2. Mix well
      3. Refrigerate until serving
    • Crema:
      1. Zest the lime and cut it in half
      2. Add lime zest and squeeze juice into sour cream
      3. Whip with a fork and taste
      4. Add more sour cream if too limey, add ore lime if too sour creamy
  6. Shred the chicken with two forks
  7. Build the perfect taco by adding cooked chicken, cooked peppers and pineapple to the shells and layer the salsa and crema on top
  8. Enjoy! 
Extra Love:
  • Serve with a side of red beans and rice if desired
  • Sliced avocado and freshly chopped cilantro are a few more toppings that would pair nicely
  • I don't think this taco needs cheese, but it you desire more dairy then I suggest queso fresco or cotija cheese which have lighter notes and will not take away from the other flavors!

Nanni's Meatballs

  Around Christmas time last year my Nanni passed away.
