Grilled Elk Steak

This grilled elk steak recipe is great for summer and so darn easy! 

Serves 2
Start to finish: 2 hours (includes marinating time)

Ingredients:
🥕1-2 lbs elk steak
🥕1 cup lemon juice
🥕1 cup olive oil
🥕1 tbsp minced garlic
🥕Salt and pepper
🥕1/2 lb small red potatoes
🥕1 medium zucchini 
🥕Corn bread muffin

Directions:
👋Preheat the oven to 350
👋Whisk together lemon juice, olive oil, and garlic in a large bowl (you made a marinade!)
👋Pour 1/3 of the lemon mixture into a medium bowl
👋Salt and pepper elk steak on all sides
👋Add elk steak to larger bowl and flip to coat with lemon marinade
👋Let marinade in the fridge for 30-60 minutes
👋While the steak marinates, quarter the potatoes and cut the zucchini lengthwise into planks
👋Add the zucchini to the medium bowl and toss to coat with lemon marinade
👋Toss potatoes with olive oil, coat with salt and pepper
👋Bake potatoes in the over for 20-25 minutes or until fork tender 
👋While the potatoes bake, fire up the grill to medium-high heat
👋Grill the zucchini planks for 15- 20 minutes
👋Alter the grill heat so one side is high heat and the other side medium heat
👋Add the elk steak to the high heat side and flip after 1 minute
👋After another minute, move the elk steak to the medium side and allow to cook for 4-6 minutes each side (this very much depends on the thickness of your elk steak) or to an internal temperature between 120 and 150 (150 being well done and 120 being medium rare)
👋Remove the steak to a serving dish and allow to rest for at least five minutes
👋Slice, serve, and enjoy with side of grilled zucchini, red potatoes, and some sweet corn bread!

Tips:
❤Using freshly squeezed lemons can provide way better flavor! Consider also zesting the lemon skins and adding the lemon zest to the marinade. You could even toss the baked red potatoes in it!
❤Make sure your steak is fully thawed for even cooking
❤Don't have elk steaks? This recipe can be done with beef steaks, too!

Nanni's Meatballs

  Around Christmas time last year my Nanni passed away. She left behind a beautiful and well lived life which made possible 4 children, 14 grandchildren, 1 great grandchild, and countless friends and extended family. My macaroni and cheese is my most requested, pot-luck-pleasing, party-going recipe so why should it not be the star of my very first post?
