Spiced Butternut Squash Chili


This chili brings fall aromas and flavors to the dinner table in just about an hour! Delicious spices enhance this warm and tasty dish and will have everyone drooling over the stove while it simmers. Healthy and satisfying in every bite! Who needs a pumpkin spiced latte when you have seasonal, warm, delish chili 👀

Serves 8

Time to Finish: 1 hour

Ingredients:

  • 1 lb ground turkey
  • 2 (14 oz.) cans black beans
  • 1 medium butternut squash, peeled, seeded and cut into 1/2 inch cubes (about 3 cups)
  • 1 tsp coriander
  • 4 tsp garlic
  • 1 tsp ginger, ground
  • 1 green bell pepper
  • 1 4 oz. can green chilis, fire roasted
  • 1 yellow onion
  • 1 tbsp oregano, dried
  • 2 cans tomatoes, fire roasted with garlic
  • 32 oz chicken broth
  • 3 tbsp tomato paste
  • 1 tbsp honey
  • 1/4 tsp black pepper
  • 1 tbsp chili powder
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp paprika
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp cumin
Directions:

  1. Heat olive oil in a large pot or Dutch oven over medium high heat.
  2. Add onion and garlic and cook for about 30 seconds until fragrant. 
  3. Add the fire roasted diced green chilis, honey and the rest of the spices (cinnamon, nutmeg, paprika, ginger, coriander, oregano, chili powder and cumin) and cook for another 15-30 seconds while stirring to combine.
  4. Add in the ground turkey, salt and pepper and stir to break it up into small pieces.
  5. When the turkey is cooked through, add in the tomato paste and stir until combined. Cook for another minute.
  6. Add the diced bell peppers, fire roasted diced tomatoes, and chicken broth. Stir to combine and bring to a simmer
  7. Simmer covered for 20 minutes.
  8. Add the black beans and butternut squash to the chili and simmer covered another 20 minutes or until the squash is cooked through but not mushy.
  9. Remove from heat. Adjust salt and pepper to taste.
  10. Serve warm with favorite toppings (see below).

Extra Love:
  • Adjust the cinnamon to nutmeg ratio based on your preferences; I tend to find cinnamon overpowering so I added more nutmeg than cinnamon.
  • Topping ideas for extra mouth watering: sour cream, grated cheddar cheese, fresh jalapeño slices, diced avocado, sliced green onions, a squeeze of lime juice

Paul's Shepherd's Pie

I have to credit my dad for this one! Growing up, Dad had one or two nights a week to cook dinner and our most frequently requested dish was his "famous" Shepherd's Pie. Pizza Dough for Days

This pizza dough is so easy to make, and totally worth the 24 hour proofing period. It can be done by kneading with your hands or using a stand mixer with a dough hook attachment. I'll take you through both ways in the steps below, and you'll be that much closer to making your own perfect pizza crust! There are a lot of steps, but they're easier than you think!
